Shorter Days, Colder Nights
I began my journey when the days were long and the nights were warm. When the sun rises early it helps beckon me out of bed. This morning I didn't get out of bed in time to do a walk so I did it tonight and the sun had already set. It really kind of killed the workout for me. I need to make a better effort to make it to my workout in the morning.
The colder nights mean that running the oven won't suffocate us. Baking has begun and comfort food season is upon us. I made my first batch of pumpkin chocolate chip cookies and the most unhealthful thing in them are the chocolate chips. They don't taste healthy and Ben couldn't believe they were sugar free:
Ingredients:
2 sticks of Margarine
1 cup splenda
1 cup splenda brown sugar
1/2 cup Eggmate
1 tsp vanilla
1 cup of pumpkin
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp all spice
1 cup chocolate chips
Instructions:
1. Preheat oven to 350
2. Cream together the margarine and splendas
3. Beat the sugar and margarine mixture until fluffy
4. Beat in the egg mate a little at a time
5. Mix in the pumpkin and the vanilla
6. Mix the flour, salt, cinnamon, all spice, and baking powder in a separate bowl until well blended
7. Add flour mixture to the wet mixture and mix well.
8. Fold in the chocolate chips
9. Drop by the spoonfuls and bake for 15 minutes
Hints:
I made my cookies really little so I could have the treat without the calorie avalanche. I also added some almond slices to mine and it gave them a yummy crunch.
