Are any of the "5 Guys" Italian? If so, they'd like my lasagna....

The word of the year is "Selfie."  
Last weekend was awesome! Ben and I took a weekend excursion, ended up in 4 different states, randomly got lost in the middle of Dartmouth College's campus, saw Stephen Kellogg and had an amazing road trip together. When I got ready on Saturday I weighed myself and I came in at 189lbs! I was so psyched that I allowed myself to have a weekend free of rules and "making good choices" (fitness choices I mean because how does one have a good time without making inappropriate choices??)

Yesterday I was too scared to weigh myself and find out what kind of damage the weekend did to my progress. This morning I bundled up for a walk and weighed myself upon returning and found a nice surprise: 190lb looked back up at me from the scale.

The weekend included a lot of beer and drinking, bacon,  fried food, and a visit with 5 Guys. I ate like crap and I felt it yesterday. It made me appreciate my new lifestyle and value my progress. It definitely isn't something I want to go back to but it was nice to pass through.

I came home and made a lasagna that I thought was pretty amazing. Here is the recipe:

Ingredients:

  • 1lb Ground Turkey
  • 1 can stewed tomatoes
  • 1 jar organic tomato sauce
  • 2 cups frozen spinach
  • half block of fat free cream cheese
  • 1/2 tsp garlic powder
  • 1tbs Italian seasoning/herb blend
  • 1 tsp salt
  • 1 container of fat free ricotta cheese
  • 1 box whole wheat oven-ready lasagna noodles
  • 1 cup chopped onion
  • 1 clove chopped garlic
  • Shredded cheese
How to:
  1. Brown the ground Turkey
  2. Add Onion, garlic, stewed tomatoes, and spinach
  3. Pour in jar of sauce and let simmer
  4. Cream together the cream cheese and ricotta cheese
  5. Add garlic powder, salt, and Italian seasoning to the creamed mixture
  6. Pour 1/3 of the meat/sauce mixture into a baking dish
  7. place noodles over the meat/sauce mixture
  8. Cover noodles with 1/3 cheese mixture
  9. Repeat this with 2 more layers (or until you run out of sauce and cheese mixtures)
  10. Cover the last layer with the rest of the sauce
  11. Top that layer with shredded cheese
  12. Bake in a 350 oven for about 30 minutes - until cheese on the top is melty and or brown on top (I recommend broiling on low for the last 5 minutes of baking)
