The Egg Roll that wasn't There

January seems to be a great month for success. In January you're all hyped up to make the next year better and have made all kinds of resolutions and the "newness" hasn't worn off the new routines yet. If January had a tagline it would be "it's time to get serious"... well that or f!@#$%^& IT'S COLD!

I started some really great habits in 2013, like starting this blog. I've also stopped eating Burger King's crispy chicken heaven... I mean sandwiches and other things of the fried delicious variety. I think that is what I can attribute the 20lbs I've lost to. Christmas kicked my ass because I was doing AMAZING and got down to 186lbs then got cocky and blew it on cookies, gravy, and stuffing. 

Curbing the bad food habits has been and will continue to be the biggest challenge for me. I love fried food, cheese, bread and pretty much everything fattening. Even corn beef hash. That stuff is like dog food and I friggin' love it. I'm a chub muffin to the core but it is time to get serious. So tonight was a milestone for me. I set out yesterday with the goal of planning meals for the week that were veggie heavy and starch light. Even if I replace two dinners per week with more veggies and less starch that will be progress.

So I'm going to be that girl that shares what she ate for the day. Seeing how this is a food and fitness blog I'm going to get away with it too :)

Vanilla Greek Yogurt is my new favorite thing. It has tons of protein, is thick and creamy, and feels like it should pack a ton of calories but it doesn't! I swear, I love this stuff. Breakfast today was a quarter cup of granola, an apple chopped up and some vanilla greek yogurt. I didn't get hungry until the afternoon and for lunch I kept the streak going and had a packet of tuna without mayo.... seriously that is a victory in itself.... pita bread, 6 tortilla chips, 1 cheese stick, and an orange. For dinner i planned a stir fry and on my way to Zumba I thought " I should really stop into New Garden for a couple of egg rolls to go with my stir fry. I mean I've been so good all day.... and yeah it is fried but it is packed with more veggies! How can that be bad? How? BECAUSE IT IS DEEP FRIED! I fought the urge came home and had stir fry with a piece of multigrain toast.

You know what? It was pretty great. I didn't even miss the egg roll that wasn't there.

Tomorrow night is stuffed green peppers night. I got some lean stew beef and two big green peppers. The plan is to slow cooker the beef all day then roast the peppers, stuff them with the beef, add a little mozzarella cheese, onions, some mushrooms and bake 'em again. Top it off with some A1 and you have a recipe this girl is looking forward to.

If I make it a game, I can rock this... not rock and egg roll this but just rock it!
